Pumpkin Pound Cake

yellow cake mix |
1/2
cup vegetable oil |
3/4
cup sugar |

teaspoon cinnamon |
1 cup
pumpkin (I use canned--Libby's, I think) |
1/2
cup water |
1/2
teaspoon nutmeg |
4 eggs |
Preheat oven to 350 degrees. Mix cake mix, pumpkin, oil, water, sugar,
nutmeg, cinnamon, and eggs together until well blended. Pour into a
tube or bundt pan. Bake for 1 hour or until toothpick inserted into the
center comes out clean. Dust cake with sifted powdered sugar or use your
favorite vanilla or cream cheese frosting-
melted and poured on top.
Looks cute at the holidays decorated with candy corn pumpkins! I
also like to use a few chopped pecans on top sometimes. Probably
could put a 1/2 cup (maybe more) of chopped pecans into the batter as
well. Will have to try that next time
