Aunt Lavenna's Hotcakes
2 eggs |
2 cups milk |
1/3 cup shortening
(or oil if preferred) |
2 cups flour |
1 tsp salt |
3 Tbs sugar |
5 tsp baking powder |
1 tsp vanilla
(optional) |
Beat eggs well in large bowl. Warm milk
in saucepan (or microwave) but do not boil. Add shortening to milk
and stir until melted then beat together all liquid ingredients. Add
dry ingredients and beat until most of lumps are gone. Preheat
griddle/pan then pour hotcakes. Cook until bubbly on top and slightly
dry around edges before turning over. Cook an additional minute or so
before removing to warmed platter or right to your breakfast plate.
This makes enough hotcakes for at least four people but is easy to cut
down to a half batch.
