Chocolate Italian Cream Cake
1/2 cup softened butter |
1/2 cup shortening |
2 cups sugar |
5 eggs |
2 cups flour |
1 tsp baking soda |
1/4 cup cocoa |
1 cup buttermilk |
1 tsp vanilla |
1 cup coconut |
1 cup chopped nuts |

Cream butter, shortening and sugar until light and fluffy. Add egg yolks (
save egg whites). Sift together flour, baking soda and cocoa, add and mix.
Add buttermilk and vanilla and stir. Stir in coconut and chopped nuts.
Beat egg whites until stiff, then fold into batter. Pour mixture into cake
pan (9X13) that has been sprayed with Bakers Joy. Bake at 300 degrees
about 25 minutes or until toothpick comes out clean.
ICING:
8 oz cream cheese |
1 stick butter |
1lb powdered sugar |
1 tsp vanilla |
1 cup coconut |
1 cup chopped nuts |
1/4 cup cocoa |

Beat butter, cream cheese with powdered sugar and cocoa. Mix well. Add
vanilla, coconut and nuts. Mix in well. Spread on partially warm cake.
