Oreo Cheesecake
1 cup crushed oreo cookies (about 12
cookies) |
4 8oz packages cream cheese,
softened (use fat free and this isn't so sinful) |
1 tsp vanilla |
1 Tbs butter or margarine |
1 cup sugar |
4 eggs |
20 oreos,
quartered |

Heat oven to 325 (or
300, if using a dark spring form pan)
Mix crushed cookies
and butter; press into bottom of 9" spring form pan. Bake 10 minutes.
Mix cream cheese,
sugar and vanilla with electric mixer on medium until well blended. Add
eggs, mixing on low speed until well blended. Gently stir in quartered
cookies. Pour over crust.
Bake at 325 or 300,
depending on pan, for 1 hour or until center is almost set. Run knife
around rim of pan to loosen cake; cool before removing rim of pan.
Refrigerate 4 hours or overnight. Serves 12.
