LCS Retreat Shortbread Cookies
I fell in love with this recipe at our first annual retreat.

1 lb. butter - no substitutes |
1 cup brown sugar |
4 to 4 1/2 cups flour |
Cream butter and brown sugar. Add 3-4 cups flour, mix
well. Dust a pastry board with some of the remaining flour. Knead for 5
minutes, adding enough flour to make a soft dough.
Roll to a 1/2 inch thickness. Cut into 3 inch by 1 inch
strips. Place 1 inch apart on ungreased cookie sheets. Prick with fork.
Bake at 325 degrees F. for 20 to 25 minutes, or until cookies are lightly
browned.
