Texas Sheet Cake
2 c. flour |
3 Tbsp. Cocoa |
½ tsp. Salt |
1 tsp. Baking soda |
2 c. sugar |
2 eggs, beaten |
2 sticks margarine |
½ c. buttermilk |
1 c. water |
1 tsp. Vanilla |

Grease and
flour pan. (15½ x 10½ x 1”) Preheat oven to 350ºIn a large bowl combine
flour, sugar and salt. Set aside. In a saucepan combine margarine, water
and cocoa and bring to a good boil. Pour this over the flour mixture and
stir together with a wooden spoon or whisk. Set aside.
In a
separate bowl, beat eggs well; add buttermilk, baking soda and vanilla and
beat again. Add this to the other mixture and stir well. Pour into
greased and floured cake pan. Bake for 30 minutes at 350º or until sides
separate from pan.
About 5
minutes before cake comes out of the oven, start to make the icing. It
should be poured over the warm cake.
Icing
1 stick
margarine |
1 box
powdered sugar |
1
tsp. Vanilla |
3 Tbsp.
Cocoa |
6 Tbsp.
milk |

Heat
margarine, cocoa and milk in a saucepan. Do not boil, just heat to melt.
Remove from heat; add powdered sugar and vanilla. Beat well with whisk or
mixer until smooth. Frost the cake in the pan as soon as it comes out of
the oven. Smooth with a spatula.
