Chicken Guadalupe
1 dozen corn tortillas torn into pieces |
1 can cream of chicken soup |
1 lb. grated longhorn or Colby cheese |
1 can cream of mushroom soup |
1 or 2 small cans diced green chilies 4oz. |
1 cup sour cream |
1 diced onion |
2/3 cup milk |
6 chicken breasts or 2 cans chunked
chicken or however much chicken you want. |
Cook chicken till tender. I simmer
it in water with celery, a carrot,
onion and basil and save broth for soups or other dishes. Tear chicken
into pieces.
Combine soups, chilies, sour cream, milk,
onion, and cut up chicken, grease a 9x13 casserole dish lightly. Layer
tortilla pieces sauce mixture, cheese. Do this twice ending with cheese
on top..
Bake covered in 350 oven for 45 to 60 min.
Take cover off last 10 min.
This is delicious with a tossed green salad
and homemade rolls!!!!!!!!!!!
