Enchilada Casserole
Here's a favorite of my daughter's.  She requests it when she wants me to make something "special" for her

1 lb ground beef
1 can taco sauce
1 can enchilada sauce
1 can cream of mushroom soup
1 can cream of chicken soup
1 can green chilies, chopped
1 medium onion, copped
1 pkg tortillas
2 C shredded cheese

Brown ground beef and onion.  Add taco sauce and enchilada sauce - mix and cook for 5 minutes.  In a separate pan, mix the 2 soups and green chilies (undrained).  Heat over low heat for 10 minutes.

In a 9 x 13 pain, put a layer of broken tortillas, layer of meat mixture, layer of soup mixture, 1 C cheese; repeat.  Bake at 350° F for 30 minutes.

Serve with refried beans, chips & salsa, refried rice, salad, etc.
