Mama's Sweet and Sour Meatballs
This is a recipe for my grandmother's
Sweet and Sour Meatballs that my mom sent to me.
They are SOOO good.
1 1/2 - 2 lbs.
ground hamburger meat |
1-2 eggs |
1/2 cup bread crumbs |
Pam or a little margarine |
2-3 onions, sliced |
1/3 cup cold water |
1 very large can of tomato sauce |
1/3 cup lemon juice |
2/3 cup sugar (or more to taste) |
Mix well the ground hamburger, egg, bread crumbs and
water. Form into balls (tiny for appetizer size or larger for dinner
size).
Slice the onions. Spray a large pot with Pam or melt a little margarine
in a large pot. Sauté the onions until soft, but not brown, separating
the slices into rings. Place the meatballs on top of the onions and cover
the pot. Cook on low heat for about 10-15 minutes. When the meatballs
are brown, drain off the fat. Add the tomato sauce (there should be
enough sauce to cover the meatballs), lemon juice and sugar to the pot and
stir. Cook on low heat covered. Be sure to stir every once in a while so
nothing burns on the bottom of the pot. After 30 minutes, taste it and
add sugar, if necessary. Cook another 15-30 minutes.
I am guessing at the amounts of ingredients. When you form the meatballs,
if the consistency is too loose, you can add more bread crumbs.
Conversely, you can add water. It is a recipe that needs to be tasted in
order to get the flavor desired. Do not be afraid to add more sugar
if it tastes too sour.
