Mexican Pizza
Crust:
3 cups cooked Minute Rice |
3/4 cup Parmesan cheese |
salt, lemon pepper, garlic powder to
taste |

Topping:
1
pound ground beef, cooked with minced onion |
16oz
jar of salsa |
1
30oz can refried beans |
2 cups grated
Jack cheese |
1 can
olives |
1 can
mushrooms, drained, or 1 cup fresh |
Preheat oven to 350.
Cook rice. Mix with
Parmesan and spices and press into cookie sheet. Set aside.
Brown meat with
onions. In large mixing bowl, mix with beans and salsa. Spread meat
mixture over rice, coming to edge. Cover with cheese. Add mushrooms and
olives.
Bake uncovered 45
minutes, or until hot and bubbly.
