This recipe is Spanish. It came from my great grandmother who is originally from Spain. It took awhile for us to get the recipe from her, as she had it in her brain and seemed to do something a little different each time she cooked it.

Ingredients

1 Chorizo Thinly sliced ½ Ham Slice – Cut in cubes 2 cans Northern Beans with juice
1 can Collard Greens (Rinsed & Drained) 1 potato – Cut in cubes (optional) ½ - 1 pkg of Vigo seasoning (this is a yellow food coloring with seasoning in it, look in the Mexican or international food section of your store)
(optional) Garlic Powder – Pinch 1-2 cups Water  

 Directions

Place chorizo and ham cubes in cooking pot and add water and vigo. Bring to boil, reduce heat and fast simmer for 30 minutes. Add remaining ingredients and you may need to add a little water if mixture is too thick and then simmer 30 minutes or till potatoes are tender. You can freeze this and thaw it out later...I usually make a triple batch and store it for cold days or just when I feel like eating it.)
