Okra & Tomatoes
2lbs fresh okra, cleaned |
1 medium onion, chopped |
1/4 C chopped green pepper |
2 Tbs Vegetable oil |
1 can whole tomatoes, undrained |
1 Tbs Vinegar |
1 tsp salt |
1/8 tsp pepper |
Cut okra crosswise in 1/2" slices, set aside. Sauté
onion and green pepper in oil till tender. Add tomatoes, vinegar,
salt & pepper, cover and cook 5 minutes. Add slices okra, cover and
simmer for 1 hour
