1) Wash 8 - 12 potatoes (leave skins on, but be sure to thoroughly poke
potatoes with fork).
2) Boil potatoes until done.
3) Remove cooked potatoes from pot to cool.
4) Once potatoes have completely cooled - remove skins from potatoes
and dice.
5) Sprinkle potatoes with white vinegar (start with 1/4 cup) and white
sugar (start with 1/4 cup.) This will give the potato salad a slight tart
taste; after you have made this salad once you can make your own
adjustments as to how much vinegar and white sugar to add.
6) Add chopped red onion (I add at least 2 medium onions), mayonnaise
(adjust amount to your liking), and at least 1/4 cup whole celery seed to
taste. I use quite a bit of fresh crushed garlic, adding salt and pepper
to taste.
7) Refrigerate for 24 hours
